Erica and I made breakfast this morning.
Bacon
And Pumpkin Muffins . . .
one of our family's favorite recipes.
They are so yummy, hot from the oven on a cold morning. The recipe make 3 dozen which is great for our big family.
Here's the recipe:
Pumpkin Muffins
3 cups dark brown sugar
1 cup oil
4 eggs, beaten
1 (16 oz.) can pumpkin
2 tsp. baking soda
2 tsp. salt
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. ground cloves
3 1/2 cups flour
2/3 cup water
Preheat oven to 350 degrees. Cream Sugar and oil. Add eggs and pumpkin; mix well. Add baking soda, salt, baking powder, and spices. Add 2 cups of the flour. Mix. Add the water and mix again. Add remaining 1 and 1/2 cups flour. Bake for 20-22 minutes.
The original recipe said to bake for 10-15 minutes. It wasn't even close to being done. I have found that it takes 20-22 minutes in our oven. Check for doneness with a toothpick.
